Oftentimes busy schedules and shifts in the family budget to accommodate summer activities can cause the above to become more of an afterthought than a priority. And with children’s bodies and brains continually growing as they do, this honest, unintended oversight can lead to a child’s malnutrition.

The issue of children receiving proper nutrition is a crucial one—so much so that there will be a Nutrition for Growth Summit in London in advance of this year’s G8 Summit, where world leaders from both developing and donor countries are called upon to commit to more leadership and funding to transform the lives of millions of malnourished children.

According to a new research study released by Save the Children, chronically malnourished children are on average nearly 20 percent less literate than those who have a nutritious diet.

That is just the surface. Here are some additional findings from the report:

  • Malnourished children could earn as much as 20 percent less in adulthood.
  • The research shows that not having a nutritious diet can severely impair a child’s ability to read and write a simple sentence and answer basic math questions correctly – regardless of the amount and quality of schooling they received.
  • Recent findings suggest that the global economic impact of malnutrition could be up to $125 billion.

There are lots of ways that moms and dads can see to it that kids stay nourished and strong with healthy meals. In addition to keeping a stockpile of ready-to-eat fruits and vegetables at home, another way to ensure kids stay healthy during the summer months (and beyond) is with what is called ‘Gr8’ recipes. Gr8 recipes are healthy, filling meals that either cost under $8 dollars or that consists of only 8 ingredients. The best part is they are usually really simple foods to prepare.

Here is an example of a Gr8 recipe below:

Pizzaritos
Recipe Type: Healthy Gr8 Meals

Prep time: 10 mins
Cook time: 15 mins
Total time: 25 mins
Serves: 5
Ingredients
  • 1 Lb. Ground Turkey
  • 1 package Large Round Flour Tortillas
  • 1 16oz. jar Spaghetti Sauce (preferably with tomato, onion, and garlic)
  • 1 package Cream Cheese
  • 1 package Velveeta cheese
  • Vegetables of your choice for topping (tomatoes, green peppers, onions)
Instructions
  1. Preheat oven to 350 degrees
  2. Brown meat. Add spaghetti sauce into skillet and allow to simmer 3-5 minutes.
  3. Line baking sheet with aluminum foil. Place tortillas into baking sheet spaced apart
  4. Spread cream cheese across the tortillas
  5. Take meat sauce and spoon into center of tortillas on top of the cream cheese
  6. Sprinkle top of meat sauce with vegetable toppings of choice
  7. Cut Velveeta into small slices, and place on top of meat sauce on the tortillas
  8. Top baking tray with a loose sheet of foil, then place into oven and bake for 10-15 minutes, or until cheese is thoroughly melted
  9. Remove from oven and let stand 3-5 minutes to cool before serving
